Quince Bay Laurel Shrub
Quince, if you've never had it, is rather like if pears were made of perfume. As a member of the rose family, Quince smell of wild roses and sweet pears, but unless you cook them are very hard and unpleasant to eat. We kiss them with enough heat to get rid of any bitterness and pair them with bay leaf and whole lemons. This sweet, lightly floral, lightly herbacious shrub is the most subtle of our flavors. Add to sparkling water for a refreshing non-alcoholic treat. Or, break out the booze and make cocktails. We love this with craft vodka and floral/citrus American style gins.
